Gyuto in a new for me sanmai steelcombination.
The coresteel consists of patternwelded ApexUltra and Procut steel.
The cladding consists of 420 stainless steel.
Lots of things going on here, high performance core and a cladding with lots of alloybanding.
The work behind this stuff is exruciating to be honest, the steel was forged by me and my buddy Patrik during a weekend recently and lets just say it was tough....!
It is completed with a handle made of Stabilized Elm burl.
Convex grind.
Balancepoint sits at ~3,5cm forward of the handle.

~2mm at the middle
~0,8mm at 2cm from the tip
